Sumac Onions
Bright tangy sumac onions with softened red onions lemon olive oil and fresh parsley. A quick no cook condiment that adds acidity and punch to grilled meats wraps bowls and sandwiches.

- 2 Small Red Onions Thinly Sliced
- 1/4 Cup Olive Oil
- Juice of 1 Lemon
- 1 Tbsp Sumac
- 1/2 Tsp Salt
- 1 Loose Cup Parsley roughly chopped Roughly Chopped
Slice the Onions - Thinly slice the red onions and add them to a mixing bowl.
Season and Soften - Add salt and lemon juice. Toss well and gently massage the onions for 30 to 60 seconds to soften them.
Add Flavour - Add the sumac and olive oil then toss until evenly coated.
Finish with Herbs - Fold in the parsley and give it one final toss.
Rest and Serve - Let sit for five to ten minutes before serving so the flavours can come together.
